Almond, Coconut & Date Balls

There’s no better way to fill in the extra time at home, then some healthy cooking in the kitchen.  These are absolutely delicious, and a perfect guilt free snack to have on hand.


6 pitted medjool dates 

3 tablespoons boiling water  

100g almond meal  

30g rolled oats 

½ Teaspoon cinnamon  

1 Teaspoon vanilla bean paste 

Desiccated coconut, to roll 



  1. Chop dates in half, cover with boiling water, leave for 5 minutes to soften  
  2. Place oats into food processor until chopped into small pieces 
  3. Add almond meal, cinnamon, vanilla bean paste and dates including water into food processor 
  4. Process until forms a dough like consistency  
  5. Form small balls and roll in desiccated coconut
